Java Chip Muffins

Java Chip Muffins

The other day I came upon a fun recipe for Java Chip muffins and made them late Sunday morning. They are really pretty easy to make and even easier to consume!
Try them for yourself -

Gather:

  • 12 tbs butter, softened
  • ⅔ cup brown sugar
  • 1 cup sour cream
  • 3 eggs, room temperature
  • 2 tbs hot fudge
  • 1 tsp vanilla extract
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup Starbucks Frappucino Latte
  • ½ cup chocolate chips
  • 2 tbs mini chocolate morsels for sprinkling

Instructions:

1. Preheat the oven to 350 degrees. Prepare muffin tins accordingly (I used a tiny bit of cooking spray with my heart shaped muffin tin)
2. In the large mixing bowl cream the butter and sugar until light and fluffy.
3. Add the eggs, 1 at a time, beating after each addition.
4. Add the vanilla, sour cream, hot fudge and Starbucks Frappucino latte. Beat until well combined.
5. Add the flour, baking powder, baking soda, and salt. Beat gently until just mixed. 
6. Fold in ½ cup of chocolate chips.
7. Spoon the batter into the prepared muffin pan, filling each cup until almost full.
8. Sprinkle the muffins with tiny chocolate morsels.
9. Bake for 20 to 25 minutes, until the muffins are lightly golden on top and a toothpick, inserted in the center, comes out clean.
